I really REALLY love cooking. In fact, I'd like to say I'm pretty darn good at it. I love cooking for myself (like you couldnt tell!), my family, and my friends. I'm part of a super swapping group (more on that later ;D), and it really encourages me to try out new things. Last week I made fajitas, and they were pretty yummy. I added lime and cilatro to the red/white onions I sauteed and they tasted so good! I ended up eating them on a tortilla by themselves.
Just now I finished cooking up a limey-cilatro rice. Not bad, if I do say so myself :D! (Ignore the quality of the picture, I took it using my cell phone!)

Here is what my concoction consisted of:
1/2 of a huge white onion (it was the size of a softball, I swear!)
1 green pepper
Cilatro, lots
Juice of one lime, not one of those key limes, but a LIME
2 cups of rice
EVOO
4 cups of water
Sausage- I used Eckrich Baja Smoked Sausage
I sauteed the onion and bell pepper. Let the onion start to turn golden. I added the sausage, then I added the rice, and let the brown up some. 4 cups of water added to that, plus the lime juice and some of the cilantro, with a dash of salt brought up to a boil. Turned down to a simmer and cooked for however long rice takes to cook. Top with more cilantro, and you get something similar to the picture above :D

I'm serving that with black beans. Their just canned, but I jazz em up with salsa and fresh cilantro (I cant get enough of that stuff!).

We had this SAME sausage last week! I had nothing but brown rice and onions on hand, but I sauteed the onions and sausage together and that alone was delicious - I can imagine how much better it would be with cilantro and lime = MMMMMMMMM!
